[B-Greek] Linear writing/speaking

When I attempt to read through one of Paul's epistles,
like Galatians, I note that his word order follows
more of an "intuitive linear progression" than, say,
Peter. That is, if I read Galatians out loud, someone
listening could more easily follow the content than if
I were to read Peter out loud (especially an English
speaking person). Peter is like putting together a
hard jigsaw puzzle, for me! Since I have read that
these NT documents were written with the intent to be
read out loud in the service, why does Peter's word
order seem noticeably different than Paul's? Is there
any evidence that Greeks spoke in a more "linear"
fashion (like English) than they wrote?
