Or does  ταχεως perhaps convey the idea of how easily rather than how quickly or how soon, they were changed to the other gospel?

I'm not so sure.  I think it just means that the Galatians are turning 
so quickly since the time they've heard the other gospel, not since 
the founding of their churches.
