He did mention sulphur(3.02%). Will organic matter
provide any kind of buffer to prevent lock-out -
from too much or too little of certain elements?

If I can remember correctly, I think I was told
10x as much calcium and 2x as much Potassium as
Magnesium by weight for a good soil cation balance.
