I was working with the EarthWorks brewer this summer. It has a
thermometer built into the side of the tank. My instructions from
EarthWorks was to start with 70 degree water - - they have found that
final counts at 22hours were much higher if you started at 70 degrees
than if you started at 'spring' temperatures (circa 55 degrees) In my
experience, the temp of the tea rose as the brewing progressed. I
have not made tea when it is colder than 70 degrees outside, however.
