  Hopefully, you did not seal the bottles. But if they were sealed, and th=
ey didn't start stinking, then you didn't have bad guys in the tea to foul =
things up, and everything was asleep enough to not be a problem.
  Yes - they were sealed up and only opened to allow a sniff _at_ 24, 48, & 72=
 hours.
  Didn't read your instructions properly I guess.
  SO . . . could the tea "go off" faster with the lids off?


  If the organisms are still rapidly growing, they should use up the oxygen=
 and make things smelly. But, if they use up all the food while you are st=
ill aerating, and the organisms start to slow down because they have no foo=
d, then they may be high in number, but not in activity.

  I made up the grain fungi foods as described by Jose and mixed it with my=
