Essentially all of the enzymes in raw foods are rapidly denatured and
degraded in the stomach. The low pH denatures them and proteases and
peptidases break them down into short peptides and amino acids. Can you list
any enzymes that are not? If so, what happens to them next and what role do
they play in human physiology?
