It's about ferment processes applied to all kinds of basic foods, including
grains, vegetables, meat, fish and so on. It is organised as a series of
short descriptions, under the main food type headings. Bill Mollison sees
the whole area of ferment as vitally important to using foodstuffs properly,
but a largely forgotten/misunderstood practice in the west. Thus many of
the recipes/processes are from eastern and asian origins. One of his
statements on a Permaculture Design course I recently went on was that rice
is a nearly useless food (in terms of nutrients), except when used as
a basis for fermenting.
The book should be easy to get (it is here in Oz); if you want details like
