This isn't an answer, just comment on the UK situation.

There's a small organic farm in the village here and they have had
considerable trouble in marketting. Supermarkets don't want to know because
a) it tends to be fattier and (consequently) far tastier (gorgeous!), and
b) unreliable in supply. It is also more expensive.

I believe that they have had more demand since the BSE problem, but mostly
they sell locally and privately and this seems to be being successful.

This appears to be how it is working ATM in the UK - local and private;
maybe some of the larger farmers can advertise and attract distant custom.

I guess the best answer is to ask around - as you have here!
