Nutritional comparison of conventional and organic cropping systems

For my undergraduate crop science research project at the University of
Guelph, I am working with a professor who is interested in researching
possible nutritional differences among conventionally and organically grown
crops. There presently is a corn, soybean and wheat rotation under organic,
high and low fertilizer and management treatments that I will have access to
analyzing. I am in need of some advice as to what nutrients and vitamins
would be useful to analyze. Additionally, although corn, soybeans and wheat
are the researched crops, I am interested in any comparative literature and
research that has been carried out on any crops/vegetables under these
different management systems.
