I am an organic gardener too, but I suspect that this is largely not
true. Back in the "Old days" they mostly cut down trees, pulled out stumps,
and grew their crops in centuries old soil. This is basic rape. When the
soil was over used and died, not knowing any better (contrary to your
assertion) they invented fertilizers and pesticides to continue the level of
crops they required.
IOW, the same folk who you say were so attuned and virtuous are the ones
who set us on the wrong path. Organic gardening is a relatively new art,
barring some manuring by sustinence farmers.
The organic method is a good method and does not need the myths and
legends created to support it. In fact, judging by the death rates and
dental problems of those manuring sustinence farmers, it might do better
without the stories and the associations they might create.
