Hi Peter: my parents have been successfully composting for the past 10+
years.
I believe they don't put any citrus fruit peel nor banana peels on the
compost because those fruits are treated with a ton of chemicals that
you don't want in your compost. They also don't put bones and meat in
there because it attracts rats and mice. Pits of fruit (cherry, plum
etc.) also doesn't go in there because it takes too long to decay.

I think they started their first compost pile with just grass clippings
and leafs. Now that they had their garden for 10+ years they throw all
the garden by products in the compost pile.

Make sure you don't built the compost too close to the house.
