The sugar will help the bacteria grow, maybe fungi, so they tie up the excess
N. Addition of carbon sources - like sugar, humic acids, proteins, etc,
allow the bacteria and fungi to grow, take up the N, immobilize the salts.
It's both food and organisms. Doesn't work without both.
