Creasy’s the word

Recently, we were looking over the list of what’s new at the Carrboro Farmers’ Market and came across “creasy greens.” Once the question “just what are creasy greens?” was on the floor, work in The Citizen newsroom halted while the googling commenced.

The specific answer is Barbarea verna or cress — upland, winter, field and so on. In common usage, the term is sometimes loosely applied to include mustard greens and even kale.

Also on the list of what’s new is totsoi, another wonderful cool-weather green. All of them wilt up real nice in the pan.
