Do you need a printed book, Frankie? If not, you might try the e-sword 
program, which can be downloaded free from http://www.e-sword.net/. With 
this, you can have an English and Greek text in parallel (and/or other 
languages, such as Spanish) and get an ad hoc rendering of the meaning of a 
word just by clicking on its Strong's number in the appropriate version. 
(There's both a KJV and a GNT with Strong's numbers - and you don't have to 
remember the pesky things, just click on them!). There are also 
commentaries on the Greek text - including Robinson's notes - and small 
dictionaries, including the headings from Thayer's. Unlike an interlinear, 
this encourages you to read the Greek text as far as you can, and only 
resort to the dictionary (or a parallel crib) when you get stuck. All the 
texts, commentaries and dictionaries in e-sword are pretty old, but they 
should be useful for your purposes.

As I said recently in another posting, change the Greek font to Cardo (and 
the Hebrew one to Ezra SIL if you need that) and the Greek will show up 
better on screen.
