Ligurian Salad Over Walnut Pesto’d Spinach Linguini

Salad Ingredients
1 clove garlic*
2 spring onions*
1 handful black olives
2 anchovies
2 cups young salad greens, both sharp and sweet*
Salt and pepper to taste
Olive oil
Red wine vinegar
1 hard-boiled egg*

Procedure
Rub the insides of the salad bowl with the clove of garlic. Thinly slice the onions and greens. Put everything in the bowl and add the olives and cleaned anchovies. Dress with oil and vinegar (1 part vinegar to 3 parts oil.) Add salt and pepper to taste. If you like, add a hard-boiled egg chopped in eighths. Mix well and let stand at least ten minutes before serving over:

Walnut Pesto Pasta Ingredients
1 package linguine – spinach, whole wheat or plain
2 cups packed baby spinach leaves*
2 cups fresh Italian parsley
1/3-1/2 cup toasted walnuts
3 tablespoons extra-virgin olive oil
2 tablespoons white wine vinegar
2 cloves garlic*
Salt & pepper to taste

Procedure
Cook pasta to al dente. Combine spinach, parsley, walnuts, vinegar, garlic and salt & pepper in food processor. Pulse until finely minced. Then with processor on, slowly drizzle in olive oil. Toss with pasta. Serve under salad.

LocoPops locations closed today

Las Locas at LocoPops figure frigid temps mean we’re not going to be craving frozen treats, or braving the cold to get them, so all their stores will be closed today. All locations will re-open as usual on Saturday, Jan. 17.

With the forecast of sub-freezing temperatures for several days, OWASA
is encouraging customers to protect their water pipes from freezing.
Frozen pipes can burst and cause substantial damage if a large amount of
water is released in a home or business.

Neal’s observes Inauguration Day

Get your inauguration on at Neal’s Deli (110 E. Main St., Carrboro). The Carrboro eatery is serving up special treats in honor of President-elect Barack Obama’s inauguration on Tuesday, Jan. 20.:

The Obama Dog – A Chicago dog with a splash of Hawaiian sunshine. Fondly called the O-Dog, it’s a roasted Hofmann’s German frank and topped with pineapple, tomato, pickles, mixed peppers, celery seed and yellow mustard, served on a brezel roll for only $5 each.

Spicy Sweet Maple Syrup Home Fries

Recipe Provided by Market Customer: Lara Horner
Ingredients:

4 medium sized sweet potatoes
½ cup olive oil
½ cup maple syrup
½ teaspoon of cayenne pepper
Kosher salt
Pepper

Procedure:
Preheat oven to 450 degrees. Slice sweet potatoes into ½ inch thick rounds. In a large bowl, combine the olive oil, cayenne and the maple syrup. Add the sweet potato rounds into the bowl and mix with your hands until both sides of the rounds are coated. Place on a baking sheet and bake in the oven. As their baking brush some of the remaining mixture from the bowl on top of the rounds, remembering to flip them so that both sides are cooked. Remove when the rounds are crispy on the outside and cooked in the middle (about 12-15 minutes).
